Cranberry-Apple Crisp begins with a black tea from the Yunnan province of China. The aroma is sweet with hints of honey and spice. Savory and winey on the palate, with smooth, deep fruity astringency, tremendous depth of flavor, cinnamon bark and nutmeg in the finish. We then add dried apples and cranberries. The cranberries add a sweet but tart flavor. The apples mingle with the cranberries and bring out the sweet and spice flavor from the base tea.
